So I made the best dinner ever. Here's the recipe:
Flounder with Vegetable/tofu stir-fry and Rice
For Stir-Fry
1/2 Tbsp. ghee (or olive oil)
Tofu, cubed, as much as you want, per your taste
15 stalks asparagus
1/4 lb. fiddlehead ferns
1 medium potato, cut into small chunks
1/3 c. edamame
1/2 c. broccoli
Tamari, as much as you want per your taste
Sesame seeds, as much as you want, per your taste
1/8 c. water
Melt ghee (or olive oil) in a large pan with high sides. Put tofu into oil and fry on each side. Add asparagus and ferns and let cook 3 minutes or so. Add potatoes, edamame and broccoli, plus an 1/8 c. of water, and cover. Let cook for 15-20 min. (until potatoes are soft). Add tamari and cook another 5 min. Less is more with tamari.
Serves 2-4
For Fish
2-4 fish fillets (depending on how many you are serving) (I used flounder)
lemon pepper, to taste
tamari, to taste
lemon juice, to taste
Thaw fish, if frozen, and lightly sprinkle with tamari, lemon pepper, and lemon juice. Bake until done. This one's pretty simple.
With the rice, just cook according to package or use a rice cooker to make it easier.
I hope you all enjoy this if you try it. I just finished my bowl of it and it was really great. Also, feel free to omit any of the vegetables you cannot find or cannot eat. The ferns are really nice in this, so if you can find them at all, use them. Some places charge a lot of money for the ferns (i.e. $15 a pound), but it's totally worth it.
So my friend Ben told me to read the Dark Tower series and so I decided to. It's really good. I'm halfway done with book one and it's nothing but awesomeness. I was never really into Stephen King until I read this. By all means pick it up.
